VEGGIE WRAP
FILLING:
Corn
Green and red peppers, chopped (raw or lightly sauteed in canola or olive oil)
Black olives, chopped
Melted Nondairy Cheese SaucePlace some nondairy cheese sauce on tortilla of choice, then add other ingredients as desired. Roll up or fold, and enjoy!
MELTED NONDAIRY CHEESE SAUCE
1 cup water
1 tablespoon fresh lemon juice
1/4 cup clean, raw cashews (or raw blanched almonds)
1-1/2 teaspoons salt
4-ounce jar of pimientos
1/2 teaspoon onion flakes or powder
3 tablespoons food yeast flakes
1/4 teaspoon garlic powder
1 tablespoon cornstarch
Yield: 21/2 cups or 10 servings.
Per 1/4 cup serving: 37 calories, 1.6 g. protein (16%), 4.4 g. carbohydrate (46%),1.6 g. fat (38%), 328 mg sodium, 11 mg calcium, 0 mg cholesterol.
